A recipe included in the cookbook:


Egg Drop Soup

4 cups prepared chicken stock (take out 2 tablespoons to mix with corn starch or arrowroot)

½ teaspoon grated fresh ginger or 1/8 teaspoon ground ginger

1 tablespoon soy sauce

1 tablespoon cornstarch or arrowroot

2 – 3 eggs beaten

2 green onions, chopped including ends

Salt & pepper to taste

Preparation

Bring soup stock, ginger, onions, and soy sauce to boil. In a small dish, combine cornstarch/arrowroot with the 2 tablespoons of saved broth. Stir until dissolved.

Slowly pour the thickening cornstarch into the stock, while stirring. Cook until thickened.

Reduce heat to simmer.

Slowly pour in eggs while gently stirring in the same direction. The egg will spread and feather. Turn off the heat, and season with salt & pepper. Serve immediately.
