Tomato, Cucumber, Peppers & More Mediterranean Salad Recipe



Quick and easy, this healthy Mediterranean Salad recipe goes with numerous foods as a side or a snack. It's also easy to add to or take away and make it your own. No lettuce as you can see. Traditional Greek salads do not use lettuce.


Approx. 6 Roma tomatoes or tomatoes of your choice, diced

1 English cucumber or a couple regular cucumbers, diced

1/2 small red onion, Vidalia onion, spring onions, chives, small dice

1 green, yellow, orange or red pepper, diced

1 - 2 stalks fresh celery

Approx 1/2 cup olives - green, kalamata, black - sliced

3/4 bunch of fresh parsley (or your favorite leafy green vegetable), chopped

1 tsp salt

1/2 tsp ground pepper

2 tbsp olive oil

2 tsp fresh lemon juice or white wine vinegar with mother

1 tsp sumac or a substitute

1/2 block feta cheese (optional) or crumbled feta cheese (sheep/goat milk feta cheese is better than cow milk feta - to your taste)


Combine everything together and let set for about an hour. It will make its own dressing, so you don't need any more than what's in the recipe. The longer it sets, the more flavorful it becomes.
